lemon balm jelly

For math this week, Clover is working on measurements of all kinds. We needed a kitchen project with dry and liquid measuring, and since my lemon balm patch is out of control and spreading all over the yard - we decided on lemon balm jelly.

She very patiently picked and measured four cups of lemon balm leaves.


We made an infusion by adding the leaves to three cups of water, bringing that to a boil, and then simmering it for about ten minutes.


Then, she added lots of sugar (4 cups - yikes!), a package of pectin, and two tablespoons of lemon juice.


We turned up the heat on the stove and Clover stirred like mad while the other kids watched, and tried to stay out of the way of popping hot jelly!


I helped with pouring the jelly into jars. We let it cool, and had a snack when the bread came out of the oven! Yum!
